Corned Beef Potato Dinner Recipe

Ingredients
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1 lb red potatoes, cut into small wedges
  • 1 tbsp vegetable oil
  • 1 large onion, thinly sliced, separated into rings
  • 1/2 tsp pepper
  • 4 c coleslaw mix
  • 4 tsps spicy brown or horseradish mustard
  • 8 oz thinly sliced deli corned beef, cut into 1/4-inch strips
  • 1/2 tsp garlic powder
  • 1 1/2 c water
  • 1/3 c red wine vinegar or cider vinegar
  • 1 tsp caraway seeds

Directions
  • Step #1 Place potatoes & water in a 3-qt.
  • Step #2 microwave-safe bowl.
  • Step #3 Cover; microwave on high for 6-8 mins.
  • Step #4 Add the onion; cover & cook for 4 mins.
  • Step #5 Stir in the coleslaw mix.
  • Step #6 Cover & cook for 3-4 mins or until potatoes are tender; drain.
  • Step #7 In a large skillet, saute the corned beef in oil for 3-4 mins; stir in the the remaining ingredients.
  • Step #8 Cook & stir for 1 min or until heated through.
  • Step #9 Add to the potato mixture; toss to mix.
  • Step #10 Cover & microwave for 2-3 mins or until heated through.
  • Step #11 Serve as soon as possible.
