Candied Popcorn - Pk Recipe

Ingredients
  • Drained & 1/3 c juice reserved
  • 2 tb Light corn syrup
  • 1 cn pineapple slices packed in own juice,
  • 1 c Sugar

Directions

  • Step #5 Sugar In 3 qt casserole, mix 1 c sugar, 1/3 c reserved juice and the corn syrup.
  • Step #6 Arrange five pineapple slices in single layer over sugar mixture.
  • Step #7 Microwave on High 8-12 min.
  • Step #8 or until sugar dissolves & slices are glossy & transparent on edges, turning over and rearranging every 4 mins.
  • Step #9 Remove slices to wire rack & cool.
  • Step #10 They will become more transparent as they cool.
  • Step #11 add in the remaining slices to the hot syrup & repeat as above.
  • Step #12 When slices have cooled completely, coat with sugar.
  • Step #13 Cover with wax paper & let this stand on wire rack at least 24 hrs to dry.
  • Step #14 Recoat with sugar.
  • Step #15 Slices will be slightly sticky.
  • Step #16 store this in airtight container with wax paper between layers no longer than 2 weeks.
