Candied Sweet Potatoes W/rum Butter Glaze Recipe

Ingredients
  • 1/4 c Sugar
  • 1 1/2 ts Vanilla extract
  • 4 tb Unsalted butter
  • 2 ea Sweet potatoes cut
  • 1 c Water
  • 1/4 c Light brown sugar
  • 1 x Juice & grated rind from 1

Directions
  • Step #1 In a 1-quart saucepan mix sweet potatoes, sugars, water, 2 Tbsp of the butter; the vanilla & lemon juice & rind.
  • Step #2 Cover & cook over med-heat/flame for 20 mins, stirring every once in awhile; uncover and cook this until potatoes are fork tender, about 10 mins.
  • Step #3 Add the remaining butter, stirring until completely melted.
  • Step #4 Cook uncovered until sauce is thick, about 2 mins more.
  • Step #5 Makes about 1 c.
