Step #1 In a 1-quart saucepan mix sweet potatoes, sugars, water, 2 Tbsp of the butter; the vanilla & lemon juice & rind.
Step #2 Cover & cook over med-heat/flame for 20 mins, stirring every once in awhile; uncover and cook this until potatoes are fork tender, about 10 mins.
Step #3 Add the remaining butter, stirring until completely melted.
Step #4 Cook uncovered until sauce is thick, about 2 mins more.
