Step #1 Tomatoes, peeled 2 tbsp lemon juice per quart 1/2 tsp pickling salt per quart 1/2 tsp sugar per quart 1/8 black pepper per quart Scald tomatoes & plunge into cold water.
Step #2 Peel & core.
Step #3 Cut or mush up.
Step #4 Add salt, pepper, sugar & lemon juice into sterilized quart jars.
Step #5 Add tomatoes.
Step #6 Do not add any liquid.
Step #7 Process in boiling water bath for 45 mins for quarts or 35 mins for pints.
