Cannoli (cream Rolls) Recipe

Ingredients
  • ---SHELLS------
  • 1 tb Sugar
  • Oil for frying
  • pn Salt
  • 1 1/2 c Flour
  • 1/2 c Dry red wine OR dry Marsala

Directions
  • Step #1 --FILLING----- 1 1/2 c Powdered sugar 2 tb Candied fruit 1/4 c Chocolate chips 1/2 ts Cinnamon 1/4 c sliced pistachios Sift together sugar, flour & salt.
  • Step #2 Work the wine in slowly, kneading to a soft dough.
  • Step #3 Roll out on a floured surface to 1/8-inch thickness, & cut out five-inch discs.
  • Step #4 Wrap each disc around a cannoli form, sealing the edge with egg white.
  • Step #5 Heat oil, in a small, five inches deep, deep saucepan, & fry one at a time until golden & crisp.
  • Step #6 Remove with tongs, let oil run off, & drain on a paper towel.
  • Step #7 Let the pastry cool slightly, then slip it carefully off the form.
  • Step #8 Note: Shells will keep for a week or two in a sealed container, so they can be made ahead.
  • Step #9 Filling: In a mixing bowl, beat the ricotta with an electric mixter.
  • Step #10 add in the remaining filling ingredients.
  • Step #11 Stuff shells just before serving.
  • Step #12 Sprinkle top with powdered sugar.
