Ingredients
---SHELLS------
1 tb Sugar
Oil for frying
pn Salt
1 1/2 c Flour
1/2 c Dry red wine OR dry Marsala
Directions
Step #1 --FILLING----- 1 1/2 c Powdered sugar 2 tb Candied fruit 1/4 c Chocolate chips 1/2 ts Cinnamon 1/4 c sliced pistachios Sift together sugar, flour & salt.
Step #2 Work the wine in slowly, kneading to a soft dough.
Step #3 Roll out on a floured surface to 1/8-inch thickness, & cut out five-inch discs.
Step #4 Wrap each disc around a cannoli form, sealing the edge with egg white.
Step #5 Heat oil, in a small, five inches deep, deep saucepan, & fry one at a time until golden & crisp.
Step #6 Remove with tongs, let oil run off, & drain on a paper towel.
Step #7 Let the pastry cool slightly, then slip it carefully off the form.
Step #8 Note: Shells will keep for a week or two in a sealed container, so they can be made ahead.
Step #9 Filling: In a mixing bowl, beat the ricotta with an electric mixter.
Step #10 add in the remaining filling ingredients.
Step #11 Stuff shells just before serving.
Step #12 Sprinkle top with powdered sugar.
Step #13 Each pastry contains 206 calories, 8 grams fat, 6 milligrams cholesterol, 29 grams carbohydrate, 5 grams protein, 76 milligrams sodium.
