Caramel Squares Recipe

Ingredients
  • 4 c Sugar
  • 4 lb Rome apples
  • 1 ts Cinnamon
  • 1/2 ts Cloves
  • 1/4 ts Ginger
  • 1 c Water
  • 2 tb Lemon juice
  • 4 1/2 lb Granny Smith apples

Directions
  • Step #1 Wash apples & cut into pieces; mix with water in a large covered sauce pot.
  • Step #2 cook this until soft, about 30 mins.
  • Step #3 Press through a food mill; measure 12 c apple pulp; & return to sauce pot.
  • Step #4 Heat 2 c sugar in a saucepan, stirring until sugar melts & turns a rich golden brown.
  • Step #5 Carefully pour this into apple pulp.
  • Step #6 Sugar will crackle and harden.
  • Step #7 add in the remaining 2 c of sugar & spices.
  • Step #8 Cook, uncovered, about 1 hr or until apple butter thickens, stirring every once in awhile to prevent sticking.
  • Step #9 stir in the lemon juice.
  • Step #10 Pour hot into hot jars, leaving 1/4 inch head space.
  • Step #11 Adjust caps.
  • Step #12 Process 10 mins in boiling water bath.
  • Step #13 Yield: 6 half pints.
