Caramel-nut Popcorn Recipe

Ingredients
  • 3 c Walnut or pecan halves OR- unblanched whole - almonds
  • 1/2 c Margarine or butter
  • 1/2 ts Baking soda
  • 12 c Poppped popcorn
  • 1/4 c Light corn syrup
  • 1/2 ts Salt
  • 1 c Packed brown sugar

Directions
  • Step #1 Divide popcorn & nuts between 2 ungreased rectangular pans, 13x9x2 inches.
  • Step #2 Cook brown sugar, corn syrup & salt over medium heat, stirring every once in awhile, margarine, until bubbly around edges.
  • Step #3 Continue cooking 5 mins; remove this from heat.
  • Step #4 stir in the baking soda until foamy.
  • Step #5 Pour over popcorn & nuts, stirring until corn is well coated.
  • Step #6 Bake uncovered in 200 degree F oven, stirring every 15 mins, 1 hr.
  • Step #7 300F calories per serving.
  • Step #8 Caramel Corn: Increase popped popcorn to 15 c; omit nuts.
