Caramelized Apple & Onion Tart Recipe

Ingredients
  • 44 Raspberries
  • Finely grated rind & juice of two lemons
  • 1 pt Double Cream
  • 11 oz Sugar

Directions
  • Step #1 Put the cream, two oz of the sugar & grated lemon rind in a saucepan & slowly bring to the boil.
  • Step #2 Meanwhile pour thr lemon juice into a large bowl.
  • Step #3 Pour the hot cream mixture onto the lemon juice, stirring carefully to mix.
  • Step #4 Cool quickly over crushed ice or in the refrigerator.
  • Step #5 Line four ramekins with clingfilm & arrange six raspberries in the base of each one.
  • Step #6 Pour on just enough of the lemon mixture to cover them.
  • Step #7 Chill in the refrigerator for 15 mins.
  • Step #8 Pour on the rest of the lemon mixture & put in the fridge for at least two hrs, or preferably over night.
  • Step #9 For the caramelised raspberries, dissolve 9 oz of sugar in 6 tbsps of water in a heavy based saucepan over a low heat.
  • Step #10 Increase the heat & boil rapidly to a golden caramel.
  • Step #11 Spear the twenty remaining raspberries on a skewer one at a time & dip into the caramel turning to coat.
  • Step #12 Transfer to a baking tray lined with non-stick baking parchment & leave to cool.
  • Step #13 To serve, turn the puddings out on to individual serving plates.
  • Step #14 Surround with the caramelised raspberries & some more fresh rasperries if you like.
