Old-fashioned Apple Butter C/p Recipe

Ingredients
  • 1 Egg yolk
  • 1 c Butter
  • 1/2 ts Salt
  • 2 c Unsifted all-purpose flour
  • 1 pk Cream Cheese
  • 2 ts Cream or milk

Directions
  • Step #1 Beat butter, cheese & salt together in a mixer until completely smooth & mixed.
  • Step #2 Work in flour to a smooth dough.
  • Step #3 (You can use a mixer for this step, too, but results are superior if you work in the flour with your fingertips, a fork or rubber spatula).
  • Step #4 Flatten dough in foil to form a an 8 X 6 inch rectangle.
  • Step #5 Chill overnight.
  • Step #6 (You can chill it several days before using).
  • Step #7 remove this from refrigerator 8 to 10 mins before rolling.
  • Step #8 (Many recipes suggest a 30 min wait before rolling dough, but it's easier to handle when rolled as cold as possible).
  • Step #9 Divide dough for ease in rolling & to insure cold dough.
  • Step #10 Keep unrolled portion in refrigerator until ready to use.
  • Step #11 Roll on floured pastry cloth with floured rolling pin or between two sheets of waxed paper.
  • Step #12 The former is easier, in my opinion, & I find absolutely no sticking when I use a pastry cloth & covered pin.
  • Step #13 I first rub cloth & pin well with flour, then shake out excess.
  • Step #14 When using waxed paper, loosen it on both sides of pastry several times as you roll.
  • Step #15 Shape as directed in specific recipes & chill before baking.
  • Step #16 Brush tops (only) of all pastries with egg yolk beaten with cream.
  • Step #17 Bake in moderate oven (350 degrees) unless otherwise specified.
