Old-fashioned Oatmeal Cookies Recipe

Ingredients
  • 2 pk -Dry yeast
  • 1/3 c Shortening
  • 2 c Quaker Oats, uncooked -
  • 2 Cakes compressed yeast; or..
  • 2 c Milk; scalded
  • 1/4 c Sugar
  • 5 c Sifted all-purpose flour -
  • 1/2 c Lukewarm water
  • 1 1/2 ts Salt

Directions
  • Step #1 Soften yeast in lukewarm water.
  • Step #2 (Use warm water for dry yeast.
  • Step #3 ) Pour scalded milk over sugar, salt & shortening.
  • Step #4 Cool to lukewarm.
  • Step #5 Stir in 1 c flour.
  • Step #6 Add softened yeast & oats.
  • Step #7 stir in the enough more flour to make a soft dough.
  • Step #8 Turn out on lightly floured board or canvas; knead until smooth and satinly, about 10 mins.
  • Step #9 Round dough into ball; place this in greased bowl; brush lightly with melted shortening.
  • Step #10 Cover & let rise in warm place until double in size, about 1 hr.
  • Step #11 Punch dough down; cover; let rest 10 mins.
  • Step #12 Shape to form loaves (see below).
  • Step #13 Brush lightly with melted shortening.
  • Step #14 Cover; let rise in warm place until nearly double in size, about 40 mins for large loaves & 30 mins for small loaves.
  • Step #15 Bake in preheated moderate oven (375 F.
  • Step #16 ) 45 to 50 mins for large loaves & about 30 mins for small loaves.
  • Step #17 remove this from pans; brush with melted butter.
  • Step #18 Cool.
  • Step #19 For LARGE LOAVES, divide dough in half.
  • Step #20 Shape each half to form a loaf.
  • Step #21 place this in greased 8-1/2" x 4-1/2" x 2-1/2" loaf pans.
  • Step #22 For MINIATURE LOAVES, divide dough into 8 parts.
  • Step #23 Shape each part to form a loaf.
  • Step #24 place this in greased 2-3/4" x 4-1/2" x 2" loaf pans.
  • Step #25 Makes 2 large or 8 miniature loaves.
