Old-fashioned Raisin Cake Recipe

Ingredients
  • 1 ts Vanilla
  • 2 ts Lemon rind
  • 1 c Butter
  • 1 c Sugar
  • 1 1/3 tb Lemon juice
  • 5 Egg separated
  • 2 1/4 c Flour

Directions
  • Step #1 Prepare a 9x5" loaf tin by greasing it with butter & lining it with butter waxed paper.
  • Step #2 Preheat the oven to 325F.
  • Step #3 Using an electric mixer cream the butter until very smooth.
  • Step #4 slowly add the sugar, beating well until very light & fluffy.
  • Step #5 With & electric mixer, lemon juice, beat the egg yolks until light-coloured & creamy & add to them the grated rind, vanilla.
  • Step #6 Beat this mixture well into the butter & sugar mixture.
  • Step #7 Very slowly stir in the the flour.
  • Step #8 Beat the egg whites until they are stiff, but not dry.
  • Step #9 Fold them into the batter, a third at a time.
  • Step #10 Spoon into the prepared tin & bake for 1 hr & 20 mins, or until light golden brown.
  • Step #11 Cool in the pan for 10 mins then turn out onto a rack.
  • Step #12 Carefully remove the wax paper & cool completely.
  • Step #13 The cake keeps well wrapped in a brandy-soaked cheesecloth in a tin.
  • Step #14 It does not freeze well.
  • Step #15 Yields 1 loaf.
