Omelets Creole Recipe

Ingredients
  • 4 Eggs
  • Few grains pepper
  • 1 tb Butter or margarine
  • 1/4 ts Salt
  • 4 tb Milk or light cream

Directions
  • Step #1 1.
  • Step #2 In a medium-sized bowl mix eggs, milk, salt & pepper; beat until well mixed.
  • Step #3 2.
  • Step #4 Melt butter in a 10-inch, heat-resistant, non-metallic pie pan in Microwave Oven 30 seconds.
  • Step #5 Rotate pan so it is completely coated with butter.
  • Step #6 3.
  • Step #7 Pour egg mixture into pie pan & cover tightly with plastic wrap.
  • Step #8 4.
  • Step #9 Heat in Microwave Oven 1 1/2 mins.
  • Step #10 5.
  • Step #11 With a rubber spatula or fork, move cooked eggs toward center.
  • Step #12 6.
  • Step #13 Heat, covered with plastic wrap, in Microwave Oven 1 1/4 mins.
  • Step #14 7.
  • Step #15 let this stand, covered, at least 1 1/2 mins.
  • Step #16 8.
  • Step #17 Loosen egg from pie pan with a rubber spatula.
  • Step #18 Fold omelet in half & place on a heat-resistant, non-metallic serving platter.
  • Step #19 If omelet is not cooked enough, return omelet to Microwave Oven for an extra 30 seconds to 1 min.
  • Step #20 Variations: Cheese Omelet: Sprinkle top omelet with 1/2 c shredded cheese after Step 6.
  • Step #21 Cover & return to Microwave Oven for an ad-ditional 30 seconds to melt cheese.
  • Step #22 Continue with Step 7.
  • Step #23 Bacon Omelet: Cook bacon before preparing omelet.
  • Step #24 Crumble bacon into egg mixture during Step 1.
  • Step #25 If desired, some of the bacon drippings may be used in place of the butter.
  • Step #26 Western Omelet: Add 1/4 c sliced onion 1/4 c sliced green pepper & 1/4 c sliced ham to egg mixture during Step 1 Heat an extra 1 min during Steps 4 & 6.
  • Step #27 Onion Omelet: Add 1/2 c sauteed onions to egg mixture during Step 1.
