One Dish Spaghetti (for 2) Recipe

Ingredients
  • Salt & pepper to taste
  • 2 lb Small red potatoes
  • 1 lb Small whole onions =OR=-
  • 1/4 c Butter or margarine
  • 8 Pork chops
  • 6 c To 8 C Shredded cabbage
  • 2 c Apple juice, divided
  • 1/3 c All-purpose flour
  • 1 sm Jar whole onions, drained
  • 1 lb Carrots, peeled cut into 3 inch pieces

Directions
  • Step #1 Coat pork chops in flour; reserve excess flour.
  • Step #2 In a large dutch oven melt butter over medium-high heat.
  • Step #3 Brown chops on both sides.
  • Step #4 Spice up with pepper & salt if desired.
  • Step #5 Remove & set aside.
  • Step #6 Stir reserved flour into pan; cook & stir until paste forms.
  • Step #7 slowly wisk in 1 1/2 c apple juice; mix until smooth.
  • Step #8 Return chops to dutch oven; cover & bake this at 350 degrees for 30 mins.
  • Step #9 Add potatoes, onions, carrots & remaining apple juice.
  • Step #10 Cover & bake 30 mins longer.
  • Step #11 top this with cabbage; cover & bake 1 to 1 1/2 hrs or until the pork chops are tender, basting every once in awhile with juices.
  • Step #12 Yield 8 servings.
  • Step #13 Diabetic Exchanges: One serving prepared with margarine & without extra salt equals: 2 meat, 43 gm carbohydrate, 2 starch, 333mg sodium, 2 vegetable, 2 1/2 fat, 56 mg cholesterol,; also 464 calories, 19 gm protein, 24 gm fat.
