One Pot Pork Chop Supper Recipe

Ingredients
  • 1/2 Sweet red pepper cut into 1/2-inch strips
  • 1/2 lg Onion; sliced
  • 1/4 c sliced fresh parsley
  • 2 Carrots; scraped and sliced diagonally into 3/4-inch thick ovals
  • 1/4 ts Hot red pepper flakes
  • 8 oz Mafalda OR- Egg Noodles, or... Medium Shells, uncooked
  • 1/4 ts Black pepper
  • 1 lb Lean beef - cut into 1-inch cubes
  • 1 Bay leaf
  • 1/2 ts Salt
  • 1 c Red wine
  • 2 Tomatoes; cut into wedges
  • 1 c Frozen peas; thawed
  • 8 oz Small fresh mushrooms cleaned

Directions
  • Step #1 In a large heavy pot, mix beef, carrots, mushrooms, onion, tomatoes, wine, bay leaf, red pepper, parsley & red pepper flakes.
  • Step #2 Cover & let simmer over low heat/flame for 1 1/2 hrs, stirring every once in awhile.
  • Step #3 stir in the salt, black pepper & pasta.
  • Step #4 Cover & cook 10 mins, stirring every once in awhile.
  • Step #5 Add peas & stir this to mix.
  • Step #6 Serve hot.
