One-pan Potatoes & Chicken Dijon Recipe

Ingredients
  • 1 ts Dried tarragon
  • 1 lb Chicken breasts - - cut into 1/2-inch slices
  • 1/4 c Honey-Dijon barbecue sauce -
  • 1 1/3 lb potatoes - cut into 1/4-inch slices
  • 2 tb Vegetable oil

Directions
  • Step #1 Place potatoes in shallow 1 1/2- to 2-quart microwave-safe dish.
  • Step #2 Cover with plastic wrap, venting one corner.
  • Step #3 Microwave on HIGH 8 to 10 mins until just tender.
  • Step #4 While potatoes cook, in large nonstick skillet over high heat, toss & brown chicken in oil 5 mins.
  • Step #5 Add potatoes; toss until potatoes are lightly browned.
  • Step #6 Add barbecue sauce & tarragon; toss until heated through.
  • Step #7 NOTE: Microwave cooking times are based on a 700-watt microwave.
  • Step #8 Adjust cooking times to your own oven.
