One-skillet: Pork Cashew Stir Fry Recipe

Ingredients
  • dr Tabasco sauce
  • 2 ts Lemon juice
  • 2 Flour tortillas
  • pn Pepper
  • pn Salt
  • Salsa
  • 2 Chicken breasts
  • 1 ts Oil
  • 1/2 Sweet pepper
  • pn Oregano
  • pn Cumin
  • Sour cream
  • 1/4 Red onion
  • 1 ts Garlic; minced
  • pn Chili powder

Directions
  • Step #1 -GUACAMOLE---- 1 Avocado 1 tb Lemon juice 1 ts Garlic; minced ds Worcestershire sauce pn Cayenne Although this is a one-serving recipe, quantities can be increased.
  • Step #2 Do not multiply spice quantities - use your taste to get the desired flavours.
  • Step #3 Chicken breasts should be skinned & de-boned & cut into strips.
  • Step #4 The pinches of spices should be generous although taste is the guage.
  • Step #5 Guacamole :- Mash all ingredients together.
  • Step #6 Make ahead or make & let this stand while preparing fajitas.

  • Step #8 Heat oil in skillet over med-heat/flame.
  • Step #9 Add chicken to skillet & Sprinkle top Spice upings.
  • Step #10 Stir fry for 4 mins until cooked & slightly golden brown.
  • Step #11 Set aside & keep warm.
  • Step #12 Save 1/2 the chicken for later in the week.

  • Step #14 Slice the vegetables & add to the skillet with the garlic.
  • Step #15 Stir fry 3 mins until tender.

  • Step #17 Return half the chicken to the skillet.
  • Step #18 mix a drop of tabasco & lemon juice & drizzle over the chicken.
  • Step #19 Heat through.

  • Step #21 Microwave tortillas on high for 1 min.
  • Step #22 Spoon fajita mixture onto tortilla, roll up & serve garnished with sour cream, salsa & guacamole.
