Step #1 3 TB oil 2 c halved & sliced red : onions 2 c halved & sliced yellow : onions 2 c halved & sliced shallots 1 c white wine vinegar 3 ts sugar : Salt & pepper Heat oil in a medium saucepan.
Step #2 Add onions & slowly cook, stirring often.
Step #3 As they begin to dry up add vinegar & sugar.
Step #4 Cook for 30 to 35 mins, until soft, brown & very sweet.
