Oprah's Ultimate Potatoes Recipe

Ingredients
  • 2 tb Jalapeo pepper --
  • 1/4 c Scallion, sliced -- white
  • Squeezed
  • 1/2 c Dried kidney beans
  • Crushed
  • 3 Garlic cloves -- peeled and
  • 1 1/2 c Tomato -- cubed
  • 1/2 c Dried red beans
  • 2 c Chicken stock -- fat
  • 1/4 c Fresh cilantro -- sliced
  • Only
  • 2 tb Chili powder
  • 1 Bay leaf
  • FOR THE SALSA-----
  • 1 c Tomato juice
  • 1 1/2 c Onion -- sliced
  • 1 ts Dried coriander
  • 1 ts Dried oregano
  • 1 ts Ground cumin
  • Skimmed
  • Off
  • 1/4 c Lime juice -- freshly
  • 1 c Brown rice
  • Halved lengthwise
  • 3 c Water
  • 1 ts Red pepper flakes --

Directions
  • Step #1 Pick over & rinse beans.
  • Step #2 Put them into a large bowl & cover completely with cold water.
  • Step #3 Let the beans soak overnight (or for at least 8 hrs).
  • Step #4 Or use the quicker method described in "Soaking Dried Beans".
  • Step #5 Drain the beans & transfer them to a large pot.
  • Step #6 Add the 3 c water.
  • Step #7 Bring to a boil over med-heat/flame & cook for 5 mins.
  • Step #8 stir in the the onion, oregano, garlic, & bay leaf.
  • Step #9 Reduce the heat to low & let simmer, for about 1 hr, uncovered, until the beans are tender.
  • Step #10 Add the chili powder, & tomato juice, coriander, red pepper flakes, cumin, stirring to mix.
  • Step #11 Continue to cook while preparing the rice.
  • Step #12 Put in the rice & chicken stock in a medium saucepan.
  • Step #13 Bring to a boil over medium-high heat.
  • Step #14 Cover, and simmer for 45 mins, reduce heat to low, or until tender.
  • Step #15 In the meantime, mix all the salsa ingredients in a small serving bowl & set it aside for the flavors to meld.
  • Step #16 When the rice is done, stir it into the bean mixture.
  • Step #17 Ladle into bowls & serve this with the salsa on the side.
