Orange Cheesecake With Cranberry-orange Toppi Recipe

Ingredients
  • 2 c 2% cottage cheese
  • FILLING
  • 1/4 c Bran
  • 1/3 c Water
  • 2 tb Butter or margarine
  • 1 tb Unflavored gelatin
  • 1/2 ts Ground cinnamon
  • 8 Strawberries or grapes
  • 1/4 c Brown sugar subs. SugarTwin
  • CRUST
  • 1/3 c Orange juice
  • 1 ts Orange rind
  • 1 sm Banana
  • 1 ts Lemon juice
  • 1 c Soft wholewheat bread crumbs
  • 2 tb White sugar subs. SugarTwin
  • 1 sm Orange

Directions
  • Step #1 CRUST mix crumbs, bran, sweetener & cinnamon in a bowl.
  • Step #2 With fingers, rub in butter until mixture is crumbly.
  • Step #3 Press onto bottom of 7 or 8" springform pan.
  • Step #4 FILLING In small saucepan, Sprinkle top gelatin over water & let this stand for about 5 mins to soften.
  • Step #5 Place over low heat/flame, stirring until gelatin dissolves.
  • Step #6 Let cool to about room temp.
  • Step #7 In food processor/blender or mixer, mix cottage cheese, banana, orange rind, sweetener, orange juice, lemon juice & dissolved gelatin.
  • Step #8 Puree until smooth (or mash cottage cheese & banana along with sweetener, juices & gelatin or press through sieve).
  • Step #9 Pour over prepared crust.
  • Step #10 Cover & chill in refrigerator 2-4 hrs or until set.
  • Step #11 At serving time, remove side from pan.
  • Step #12 With wide metal lifter, slip cheesecake off bottom of pan onto serving plate or leave on base of springform pan.
  • Step #13 Peel orange, removing pith & thin membrane.
  • Step #14 Remove sections.
  • Step #15 Slice strawberries or grapes.
  • Step #16 Arrange on top of cheesecake along with orange slices.
  • Step #17 Makes 8 servings.
