Orange Currant Scones Recipe

Ingredients
  • 1 ts Baking powder
  • 2 lg Eggs
  • 3 tb FRESH squeezed orange juice
  • 3/4 c Buttermilk
  • 1 1/2 tb Grated orange rind
  • 1 c Butter or marjarine,softened
  • 1 ts Baking soda
  • 1 ts Vanilla extract
  • 1/2 c Golden raisins
  • 1 c Sugar
  • 3 c Cake flour, sifted

Directions
  • Step #1 ORANGE SYRUP--- 1 1/2 c Sugar 1 c Light corn syrup 3/4 c Fresh orange juice Source: Southern Living Magazine 1/97 BEAT butter at medium speed with an electric mixer until fluffy.
  • Step #2 slowly add sugar, beating well.
  • Step #3 Add eggs, 1 at a time, beating after each additio.
  • Step #4 Add vanilla, mixing well.
  • Step #5 mix flour, & baking powder; add to butter mixture alternately with buttermilk, baking soda, beginning & ending with flour mixture.
  • Step #6 stir in the raisins, grated orange rind, & juice.
  • Step #7 SPOON batter into greased & floured miniature (1 3/4-inch) muffin pans, filling two-thirds full.
  • Step #8 bake this at 350 degrees F.
  • Step #9 for 12 mins or until light golden.
  • Step #10 Remove from pans as soon as possible; dip tops into Orange Syrup.
  • Step #11 Cool completely on wire racks.
  • Step #12 ORANGE SYRUP: mix all ingredients in a large bowl, stirring well.
  • Step #13 Cover & chill at least 2 hrs or until sugar dissolves.
  • Step #14 Stir well before using.
