Step #1 Juice lemons & oranges, being very careful to extract every seed, as they cause a bitter taste.
Step #2 To a syrup made of water & sugar add juices, & when partly frozen add the meringue of one egg.
Step #3 When frozen fill in the orange fruit cases ad place this in Ice-cream Cave for three or four hrs, & it is then made more delicious by covering the ice in each case with a meringue & browning quickly with a red hot salamander, serving as soon as possible.
Step #4 The orange pulp taken from cases can be used in obtaining juice.
