Orange Scones Recipe

Ingredients
  • 1/2 c Sauvigno Blanc Wine
  • 2 tb Yellow bell peppers, sliced
  • sliced
  • 4 Oranges, peeled, segmented
  • 2 tb Red onion finely sliced
  • 14 c Sugar
  • 1 tb Olive oil
  • 2 pn Powdered saffron
  • Salt & Pepper to taste
  • Cayenne pepper to taste
  • 1 Orange zest, blanched
  • 1/2 c Tomato juice
  • Rine removed.
  • 1 1/2 c Tomatoes, peeled seeded,
  • 1/4 c Red wine vinegar
  • 1/2 c Sun dried tomato halves

Directions
  • Step #1 Directions Reconstitue the dried tomatoes; drain & slice thin Simmer saffron with wine five mins.
  • Step #2 Strain into another pan containing red wine vinegar & sugar.
  • Step #3 Cook reducing to syrup-like consistency.
  • Step #4 In oil, lightly saute onions & peppers, retaining color and texture.
  • Step #5 Add tomatoes, zest juice, oranges, dried tomatoes, salt pepper & cayenne.
  • Step #6 Allow to stand 2 or more hrs at room temp to develop taste.
