Orange-almond Pastries - Lite Recipe

Ingredients
  • Orange rind strip, for garnish
  • Butter-flavored cooking spray
  • 1/2 c Orange marmalade
  • 1/4 c Light cream cheese
  • 3 dr Almond extract
  • 1 tb Powdered sugar, sifted
  • 6 Sheets phyllo dough, thawed

Directions
  • Step #1 preheat your trusty oven to 375 degrees.
  • Step #2 mix orange marmalade & almond extract; set aside.
  • Step #3 Coat phyllo sheets, working with one sheet at a time, lightly with cooking spray; fold each in half lengthwise.
  • Step #4 Lightly coat with cooking spray; cut crosswise into 4 rectangles (6 1/2 x 4 1/2-inches).
  • Step #5 Spread 1/2 tsp cream cheese on the short side of each phyllo strip; top this with 1 tsp marmalade mixture.
  • Step #6 Fold long sides in about 1/2 inch.
  • Step #7 Beginning with the marmalade-filled end, roll up jelly roll fashion.
  • Step #8 Place each roll, seam side down, on a baking sheet.
  • Step #9 Lightly coat tops of rolls with cooking spray.
  • Step #10 Bake for 7 mins.
  • Step #11 remove this from pans as soon as possible; Sprinkle top with powdered sugar.
  • Step #12 Cool completely on a wire rack.
  • Step #13 Place on a serving tray & garnish with orange rind, if desired.
