Orange-butterscotch Cheesecake Recipe

Ingredients
  • 24 oz Cream Cheese, Softened
  • 1 1/4 c Old Fashioned Oats Uncooked
  • 2 tb Unbleached All-purpose Flour
  • 1/4 c Packed Brown Sugar
  • 4 ea Large Eggs
  • 2 ts Grated Orange Peel
  • 1/4 c Margarine Melted
  • 1/4 c Margarine, Melted
  • 1 ts Vanilla
  • 1/3 c Light Corn Syrup
  • 1/2 c Packed Brown Sugar
  • 1 ts Vanilla
  • 3/4 c Granulated Sugar

Directions
  • Step #1 mix oats, margarine, brown sugar & flour; press into bottom of 9-inch springform pan.
  • Step #2 bake this at 350 degrees F, peel & vanilla, granulated sugar, 15 mins mix cream cheese, mixing at medium speed on electric mixer until well mixed.
  • Step #3 Add eggs, one at a time, mixing well after each addition; pour over crust.
  • Step #4 bake this at 325 degrees, 1 hr & 5 mins.
  • Step #5 Loosen cake from rim of pan.
  • Step #6 Chill.
  • Step #7 mix brown sugar, corn syrup & margarine in saucepan; bring to boil, stirring constantly.
  • Step #8 remove this from heat; stir in the vanilla.
  • Step #9 Chill until slightly thickend.
  • Step #10 Spoon over cheesecake.
  • Step #11 Garnish with orange slice & fresh mint, if desired.
