Orange-date Muffins Recipe

Ingredients
  • 1/3 c Sugar
  • extra sugar
  • 2 1/2 ts Baking powder
  • 1/2 c chilled unsalted butter, cut into pieces
  • 3/4 ts Salt
  • 3/4 c Dried currants
  • 1 tb Grated orange peel
  • 1/2 c Chilled solid vegetable shortening, cut into pieces
  • 1/2 ts Baking soda
  • 1 c Plus 2 tbsps chilled buttermilk
  • 3 c All purpose flour

Directions
  • Step #1 These scones are terrific with butter & honey or marmalade.
  • Step #2 preheat your trusty oven to 425F.
  • Step #3 Line large baking sheet with foil.
  • Step #4 Stir flour, 1/3 c sugar, baking powder, salt & baking soda in large bowl to mix.
  • Step #5 Add butter & shortening; using fingertips, rub in until coarse meal forms.
  • Step #6 Add 1 c buttermilk, currants & orange peel.
  • Step #7 Stir carefully until dough comes together in large moist clumps.
  • Step #8 Gather dough into ball.
  • Step #9 Transfer dough to lightly floured work surface.
  • Step #10 carefully knead 3 or 4 turns to mix will.
  • Step #11 Divide into 2 pieces; flatten into 3/4-inch-thick rounds.
  • Step #12 Using floured knife, cut each round into 8 wedges.
  • Step #13 Transfer wedges to prepared baking sheet.
  • Step #14 Brush with remaining 2 tbsps buttermilk & Sprinkle top with extra sugar.
  • Step #15 Bake scones until light golden brown, about 15 mins.
  • Step #16 Serve warm or at about room temp.
