Step #1 5 c cantaloupe -- cubed 1/2 c sugar 5 TB honey 2 ts fresh lemon juice -- or This is a refreshing dessert; serve from 6 to 12; vary the size of the scoop & garnish with a mint leaf.
Step #2 Use any orange-flesh melon; about 4 lbs will yield 5 c cubed).
Step #3 Peel & seed melon & cut into chunks.
Step #4 Puree melon with sugar, honey & lemon juice in a food processor/blender.
Step #5 Freeze in an ice-cream maker as usual; about 20 to 30 mins.
Step #6 Or: simply place the mixture in a shallow metal pan & freeze until firm.
Step #7 Transfer to a food processor/blender & process until smooth and fluffy.
Step #8 Serve as soon as possible, or return to thefreezer until serving time.
Step #9 For the best flavor, ices should be served within 2 to 3 days.
Step #10 Use waxed paper or saran wrap prevent the top from drying during storage.
