Orange-molasses Marinade Recipe

Ingredients
  • 2/3 c Orange juice
  • 2 c Butter nut Squash, peeled and coarsely sliced
  • 1 c Onions, coarsely sliced
  • 1 c Carrots, thinly sliced
  • 1 1/2 tb Miso, white Broth as needed

Directions
  • Step #1 Dissolve miso in orange juice & set aside.
  • Step #2 Cook butter nut squash in water until it just looses its firmness & drain.
  • Step #3 Meanwhile saute, in a large skillet, the carrots & onions in broth until onions are just translucent & the carrots are crisp tender.
  • Step #4 Add the squash and orange juice mixture to the carrots & onions.
  • Step #5 Continue cooking until the squash has the desired texture & the moisture has boiled off.
  • Step #6 This recipe is my adaption of one from Friendly Foods by Ron Picarski.
  • Step #7 The combination of orange juice & white miso gives the dish a very pleasant taste.
