Orange-mustard Sauce Recipe

Ingredients
  • 1 tb Olive oil
  • 1/3 c Molasses
  • 1 1/4 c finely minced
  • Salt to taste
  • Red onion
  • 2 ts Cracked black pepper
  • 1 1/4 c Fresh orange juice
  • 3 tb Finely minced garlic
  • 1 tb Grated orange zest
  • 1 tb Toasted, crushed coriander
  • 1/2 c Balsamic vinegar
  • Seeds

Directions
  • Step #1 Heat oil in a sauce pan & saute onions & garlic until just beginning to color.
  • Step #2 add in the remaining ingredients, bring to a boil then reduce heat & let simmer uncovered for 5 - 7 mins.
  • Step #3 Marinade should be lightly thickened.
  • Step #4 remove this from heat & cool before using.
  • Step #5 Yields approximately 3 c or enough to marinate two large chickens or a 5 lb boneless pork loin roast.
  • Step #6 Marinate put in the fridged for at least 4 hrs or overnight.
  • Step #7 Store any unused marinade in refrigerator.
  • Step #8 For a flavorful sauce, reduce marinade to a light sauce consistency over moderate heat.
  • Step #9 Strain, pushing on solids to extract all liquid.
