Ingredients
1 tb Olive oil
1/3 c Molasses
1 1/4 c finely minced
Salt to taste
Red onion
2 ts Cracked black pepper
1 1/4 c Fresh orange juice
3 tb Finely minced garlic
1 tb Grated orange zest
1 tb Toasted, crushed coriander
1/2 c Balsamic vinegar

Directions
Step #1 Heat oil in a sauce pan & saute onions & garlic until just beginning to color.
Step #2 add in the remaining ingredients, bring to a boil then reduce heat & let simmer uncovered for 5 - 7 mins.
Step #3 Marinade should be lightly thickened.
Step #4 remove this from heat & cool before using.
Step #5 Yields approximately 3 c or enough to marinate two large chickens or a 5 lb boneless pork loin roast.
Step #6 Marinate put in the fridged for at least 4 hrs or overnight.
Step #7 Store any unused marinade in refrigerator.
Step #8 For a flavorful sauce, reduce marinade to a light sauce consistency over moderate heat.
Step #9 Strain, pushing on solids to extract all liquid.
