Oregon Hazelnut Dipping Sauce Recipe

Ingredients
  • 2 tb Water
  • 1 1/4 c Sugar
  • 1 c Roasted & sliced hazelnuts
  • 1/4 c Corn syrup
  • 1 ts Baking soda
  • 1/4 c Hazelnut liqueur or extract
  • 1/8 ts Salt

Directions
  • Step #1 mix sugar, corn syrup, liqueur or extract, water & salt in a 1-quart sauce pan & bring to a boil.
  • Step #2 Cook to 300F (syrup will be golden color) without stirring.
  • Step #3 remove this from heat & add hazelnuts & soda (mixture will foam); stir briskly & pour this into buttered pan.
  • Step #4 Let cool.
  • Step #5 Break into coarse crumbs with rolling pin.
  • Step #6 store this in airtight container until used.
