Step #1 In a medium saucepan, mix sugar, flour & salt.
Step #2 Stir in milk; cook & stir over medium-high heat until thickened & bubbly.
Step #3 Reduce heat; cook & stir 2 mins longer.
Step #4 Remove from the heat; slowly stir about 1 c of hot mixture into beaten eggs.
Step #5 Return all to saucepan; cook & stir over med-heat/flame until nearly boiling.
Step #6 Reduce heat; cook & stir about 2 mins more (do not boil).
Step #7 Remove from the heat; stir in the 1 c coconut, butter & vanilla.
Step #8 Pour into pie shell; sprinkle with remaining coconut.
Step #9 Chill for several hrs before serving.
Step #10 Refrigerate leftovers.
