Coconut Cream Pie Recipe

Ingredients
  • 1 (9 inch) pastry shell, baked
  • 3 c milk
  • 3 tbsps all-purpose flour
  • 1/8 tsp salt
  • 1 1/2 tsps vanilla extract
  • 3/4 c sugar
  • 3 eggs, beaten
  • 1 1/2 c flaked coconut, toasted, divided
  • 1 tbsp butter or margarine

Directions
  • Step #1 In a medium saucepan, mix sugar, flour & salt.
  • Step #2 Stir in milk; cook & stir over medium-high heat until thickened & bubbly.
  • Step #3 Reduce heat; cook & stir 2 mins longer.
  • Step #4 Remove from the heat; slowly stir about 1 c of hot mixture into beaten eggs.
  • Step #5 Return all to saucepan; cook & stir over med-heat/flame until nearly boiling.
  • Step #6 Reduce heat; cook & stir about 2 mins more (do not boil).
  • Step #7 Remove from the heat; stir in the 1 c coconut, butter & vanilla.
  • Step #8 Pour into pie shell; sprinkle with remaining coconut.
  • Step #9 Chill for several hrs before serving.
  • Step #10 Refrigerate leftovers.
