Cardamom Kulfi Pops Recipe

Ingredients
  • 2 tb Light corn syrup
  • 2 tb Margarine or butter
  • 1/4 c sliced pistachios
  • 1/2 ts Ground cardamom
  • 1/4 c sliced walnuts
  • 2/3 c Milk
  • 2 c Sugar
  • 1/4 ts Salt

Directions
  • Step #1 Cook sugar, salt & corn syrup in 2-quart saucepan over medium heat, milk, stirring constantly, until sugar is dissolved.
  • Step #2 Cook, stirring every once in awhile, to 240F on candy thermometer or until small amount of mixture dropped into very cold water forms soft ball that flattens when removed from water.
  • Step #3 remove this from heat.
  • Step #4 Add margarine.
  • Step #5 Cool mixture to 120F without stirring.
  • Step #6 (Bottom of pan will be lukewarm.
  • Step #7 ) Add cardamom.
  • Step #8 Beat vigorously & continuously until candy is thick & no longer glossy, 5 to 10 mins.
  • Step #9 (Mixture will hold its shape when dropped from spoon.
  • Step #10 ) Quickly stir in the nuts.
  • Step #11 Spread mixture in buttered 9x5x3-inch loaf pan.
  • Step #12 let this stand until firm.
  • Step #13 Cut into 1-inch squares.
