Cardamom-spiced Coffee Recipe

Ingredients
  • 25 Cardamom pods
  • 1 c Water
  • 3 c Low-fat milk or rice milk
  • 8 Sprigs mint
  • 1 c Basmati or jasmine rice
  • 1 ts Vanilla
  • 1/4 c Honey
  • 1/3 c Pitted dates, sliced
  • 1 ts Minced ginger
  • 3 4-inch cinnamon sticks

Directions
  • Step #1 mix 1 c milk, ginger, water, cardamom & cinnamon sticks in a medium saucepan.
  • Step #2 Bring to a boil, then add rice & honey & stir well.
  • Step #3 Bring mixture to a boil once more, then reduce heat to low and simmer until rice is tender & liquid has been absorbed (about 20 mins).
  • Step #4 stir in the remaining milk, dates, honey & vanilla.
  • Step #5 Let cook for 10 mins, stirring frequently.
  • Step #6 When pudding has thickened slightly, transfer to serving dishes & chill.
  • Step #7 To serve, garnish with fresh mint.
