Caribbean Jerk Pork Roast Recipe

Ingredients
  • 2 c Yucca; peeled & cubed
  • 8 Plum tomatoes; quartered lengthwise
  • 1 1/2 c Chickpeas; cooked
  • 1/4 ts Salt
  • 2 c Celery root; sliced
  • 1/4 c Olive oil
  • 1/2 c Fresh cilantro;sliced
  • 16 Whole garlic cloves
  • 2 c Pumpkin; cubed
  • 2 md Chayote squash; cut into 2" pieces
  • 1 tb Black pepper
  • 4 lg Yellow onions; coarsely sliced
  • 1 1/2 c Pinto beans; cooked
  • 2 c Battata; peeled & cubed
  • 1 ts Hot pepper sauce
  • 3 tb Ground cumin

Directions
  • Step #1 preheat your trusty oven to 300F deg.
  • Step #2 mix all ingredients in a large roasting pan or casserole dish.
  • Step #3 place this in oven & cook, uncovered, for 4 hrs.
  • Step #4 The pumpkin, chayote & tomatoes will cook down to a thick sauce.
  • Step #5 Stir every 30 mins.
  • Step #6 Add more stock if necessary.
  • Step #7 Serve hot.
