Caribbean Shrimp-bean Salad Recipe

Ingredients
  • 1/4 c Fresh lime juice
  • 6 c Water
  • 1 Garlic clove, pressed
  • 1 lg Tomato, sliced
  • 1 tb Vegetable oil
  • 1/2 ts Ground cumin
  • 1/4 c Vegetable oil
  • 1 md Onion, sliced
  • 1/4 c Minced fresh cilantro
  • 1/2 ts Salt
  • 3/4 ts Ground turmeric
  • 8 oz Bow tie pasta, uncooked
  • 1 lb Unpeeled, medium-size fresh shrimp
  • 1 cn black beans, rinsed and drained
  • 1 cn pineapple chunks, drained

Directions
  • Step #1 Peel shrimp, & devein, if desired.
  • Step #2 Saute sliced onion & garlic in 1 tbsp hot oil in a Dutch oven until tender.
  • Step #3 Add 6 c water & next 3 ingredients; bring mixture to a boil.
  • Step #4 Add pasta; cover, reduce heat, & let simmer 12 mins.
  • Step #5 stir in the shrimp.
  • Step #6 Cover and simmer 5 mins or until shrimp turn pink; remove this from heat.
  • Step #7 Drain & cool 10 mins.
  • Step #8 stir in the black beans & next 3 ingredients.
  • Step #9 Whisk together 1/4 c oil & lime juice.
  • Step #10 Pour over salad, & toss.
  • Step #11 Serve as soon as possible, or cover & chill.
