Carrot & Ginger Soup Recipe

Ingredients
  • 4 1/2 c Light Vegetable Stock Water
  • 1 1/2 lb Carrots Sliced
  • 3 tb Sherry
  • 1 ts Fresh Grated Ginger
  • Black Pepper
  • 1 lb Peeled & sliced Apples,
  • 1 tb Jargarine
  • 1 Onion sliced

Directions
  • Step #1 1.
  • Step #2 Saute the Onion in Margarine Covered for 5 Min, Without Browning.
  • Step #3 Then add the Carrots & Ginger.
  • Step #4 Cover & Cook for a Further 10 Min.
  • Step #5 Stir from Time To Time.
  • Step #6 2.
  • Step #7 add the Stock or Water & Bring To a Boil, Then Simmer carefully for 15 Min, until the Carrots Are Tender.
  • Step #8 Puree the Soup in a Foodprocesor, Then Sieve (Not Really Necessary).
  • Step #9 3.
  • Step #10 Return the Soup To the Finsed Out Pan, Reheat carefully & Spice up To Taste With Pepper.
  • Step #11 (yOu May Use Parsnips Instead Of Carrots & add 1 T.
  • Step #12 Curry Powder To the Onions When You Saute Them.
  • Step #13 a Swirl Of Yogurt on Top Is Good & add Some Crisp Croutons.
