Carrot & Wheat Berry Soup Recipe

Ingredients
  • 1 kg Sugar, warmed
  • 1 kg Rhubarb, thinly sliced
  • 1 kg Carrots, peeled & sliced

Directions
  • Step #1 Place carrots in a pot with enough water to cover.
  • Step #2 Bring to a boil, covered & cook till tender.
  • Step #3 Drain, reserving 1/2 c of liquid.
  • Step #4 Puree carrots & liquid.
  • Step #5 Transfer to large pot.
  • Step #6 Add rhubarb & sugar to pot & stir till sugar is dissolved.
  • Step #7 Bring to a slow boil & simmer carefully for 20 mins.
  • Step #8 remove this from heat & pour this into warm sterile jars.
  • Step #9 Seal.
  • Step #10 Letts, "Jams, Pickles & Chutneys".
