Carrot & Zucchini Bars With Citrus Icing Recipe

Ingredients
  • 1 c Yogurt
  • 1/4 ts Ground cumin
  • 1/2 ts Fresh red or green pepper, hot, finely sliced, 1/2 ts Crushd hot red pepper flakes
  • 1 ts Sugar
  • 1 lg Carrot, scrapped & trimmed
  • 1/4 c Finely sliced onion

Directions
  • Step #1 1.
  • Step #2 Cut carrot into coarse shreds with hand grater or food processor/blender.
  • Step #3 there should be about 1 c.
  • Step #4 2.
  • Step #5 Drop carrot shreds into boiling water & cook for about 30 seconds.
  • Step #6 Drain well.
  • Step #7 3.
  • Step #8 mix yogurt, carrots & remaining ingredients.
  • Step #9 Serve chilled Submitted.
