Carrot Cake With Marmalade Cream Cheese Frost Recipe

Ingredients
  • 2 ts Baking soda
  • 1/4 c Dark raisins
  • 4 ea Eggs
  • 1 ts Vanilla
  • 4 ts Vegetable oil
  • 3/4 c Whole wheat flour
  • 1 c Crushed pineapple, drained
  • 1 1/3 c Instant dry milk powder
  • 3 c Grated carrots
  • 2 ts Ground cinnamon
  • 3 tb Brown sugar, packed

Directions
  • Step #1 Spray an 8" tube pan with nonstick cooking spray & set aside.
  • Step #2 mix eggs, sugar, oil, & vanilla; beat well.
  • Step #3 With mixer at low speed, baking soda, flour, & cinnamon, beat in milk powder, until throroughly mixd.
  • Step #4 stir in the remaining ingrediends.
  • Step #5 pour this into pan & bake 40-45 mins, until cake tests done.
  • Step #6 Cool in pan for 5 mins.
  • Step #7 Remove cake from pan; drizzle with CREAM CHEESE GLAZE.
