Step #1 In a large bowl, mix the oil, the sugar, the eggs, & the vanilla.
Step #2 Mix well with a whisk.
Step #3 Sift the flour, the cinnamon, the soda, & the salt in a smaller bowl.
Step #4 Add the sifted ingredients to the oil, eggs, vanilla mixture, sugar, & mix well using the whisk.
Step #5 stir in the the flaked coconut,and the sliced nuts, the carrots, the crushed pineapple, using the whisk.
Step #6 pour this into a well greased & floured 13 X 9 X 2 pan, (You may use a Bundt pan or a tube pan) & bake this at 350 F.
Step #7 for 50 to 60 mins.
Step #8 Allow it to cool in the pan about 30 mins.
Step #9 While it bakes: Test the cake after 30 mins, the center is firm, this cake should be almost underdone! Frost as desired, the typical test of the center of the cake being done is used, but by using a toothpick or skewer to test, using Cream cheese or butter frosting (cream cheese suggested), using this mixture.
Step #10 Cream Cheese Frosting: Mix the cream cheese, & the salt, then add the powdered sugar, the vanilla, the milk, one c at a time, until it is well mixed.
