Carrot Ginger Cake Recipe

Ingredients
  • 1 1/2 c Grated carrots
  • 1/2 ts Lemon flavoring
  • 3 1/2 c Sugar
  • 1/2 c Water
  • 1/2 c Sweetened condensed milk

Directions
  • Step #1 Cook carrots, milk, sugar, & water, to soft ball stage (234 - 238 F).
  • Step #2 remove this from fire, add flavoring, & cool to about room temp.
  • Step #3 Beat until creamy.
  • Step #4 pour this into buttered pan, pat down to 1 inch depth, & when firm cut in squares.
  • Step #5 The grain is likely to be a little coarse due to the grated carrots.
