Ingredients
  • 1 1/2 ts Vanilla
  • Or 2 lb.can drained and
  • 1/2 c Brown sugar
  • Mashed
  • 1/2 c Margarine, melted
  • 1 1/2 c Sifted flour
  • 1 tb Lemon juice
  • 2 Egg whites, stiffly beaten
  • 1 ts Salt
  • 2 c Cooked carrots--mashed
  • 2 Egg yolks, beaten
  • 1/2 ts Baking soda
  • 1/2 ts Baking powder

Directions
  • Step #1 mix all ingredients, folding the egg whites in last.
  • Step #2 pour this into a 1 1/2 or 2 quart greased casserole dish.
  • Step #3 bake this at 350 for 1 hr.
