Carrot Salad: Ladies Lunch Recipe

Ingredients
  • 3/4 ts Sugar;
  • 5 tb Olive oil
  • 1/2 ts Salt; optional
  • 1/4 c Lemon juice
  • 1 lb Carrots; cut in thin strips
  • 2 ts Sugar
  • 2 ts Dijon-style mustard
  • 3 c ; water
  • 2 tb Fresh dill; sliced 2 ts Dillweed
  • 1/2 c Onions; sliced

Directions
  • Step #1 mix lemon juice, pepper, the 2 tsps sugar, onions, the salt, oil, mustard, & dill in a large c or cruet.
  • Step #2 Mix well or shake until very well mixed.
  • Step #3 mix carrots, water remaining salt & sugar in a large saucepan.
  • Step #4 Bring the water to a boil; lower heat & cover.
  • Step #5 Simmer until tender about 5 mins.
  • Step #6 Do not overcook.
  • Step #7 Drain; cool quickly under cold running water to stop further cooking.
  • Step #8 Transfer to a salad bowl.
  • Step #9 Pour the dressing over & toss to coat.
  • Step #10 Add extra Spice uping if needed & chill until ready to serve.
