Carrot Slaw With Cashews Recipe

Ingredients
  • 1 tb Ground coriander
  • 1 tb Chile powder
  • 1 Clove garlic, minced
  • 2 Ribs celery, sliced
  • 1 tb Ground cumin
  • 2 c Chicken or vegetable stock
  • 3 lg Carrots, sliced
  • 1 ts Oregano flakes
  • 3 c Low sodium tomato cocktail
  • 1 md Onion, sliced
  • 1 ts Ground cinnamon

Directions
  • Step #1 Coarsely chop vegetables & place with all other ingredients in a pot.
  • Step #2 Bring to a boil, reduce to a simmer & cook uncovered 20 mins, or until all the vegetables are soft.
  • Step #3 Stir once or twice.
  • Step #4 Place small quantities in a mixer & carefully mix until all the sauce is pureed.
  • Step #5 Transfer to a pot to keep warm.
