Ingredients
  • 1 cn Chicken Broth
  • 1 1/2 ts Low Cal. Margarine
  • 1/2 lb Carrots sliced
  • 1/4 c sliced Celery
  • 1 1/2 ts Dried Dillweed
  • 1/3 c sliced Leeks
  • 1/2 ts Ground Nutmeg
  • 1 c Water
  • Peeled & sliced
  • Freshly Grated Nutmeg
  • 1/4 c sliced Onion
  • 3 sm Potatoes

Directions
  • Step #1 Saute Leeks, Onion & Celery in Margarine in A Large Saucepan 3 Min.
  • Step #2 Add Potatoes, Carrots & Chicken Broth.
  • Step #3 Bring To A Boil, Reduce Heat & Simmer 20 Min.
  • Step #4 OR Until Vegetables Are Tender.
  • Step #5 With Knife Blade in Processor, Add Half Of Cooked Vegetables & Half Of Liquid.
  • Step #6 Process 5 Min.
  • Step #7 OR Until Smooth.
  • Step #8 Pour Mixture Into A Bowl.
  • Step #9 Repeat Procedure With Remaining Vegetables & Liquid.
  • Step #10 Add Dill, Nutmeg & Water To Puree.
  • Step #11 Stir Well.
  • Step #12 Cover, put in the fridge 6 hrs.
  • Step #13 Garnish With Grated Nutmeg.
