Cashew Brittle Recipe

Ingredients
  • pn Cayenne
  • 1 c ;water or vegetable stock
  • 1/4 c Parsley; finely minced
  • 1/4 ts Sea salt, or to taste
  • 3/4 c Cashews, raw, whole
  • 2 tb Whole wheat pastry flour

Directions
  • Step #1 Place the cashews, salt, flour, water or stock, & cayenne in a mixer (a food processor/blender will not work as well).
  • Step #2 mix until very smooth & creamy.
  • Step #3 Pour the nixture into a small saucepan.
  • Step #4 Bring to a boil over high heat, stirring constantly.
  • Step #5 Add the parsley & mix.
  • Step #6 Serve over steamed vegetables such as broccoli or cauliflower.
