Casserole De Santa Fe Recipe

Ingredients
  • 2 tb Sunflower seeds
  • 1 tb Finely grated orange peel
  • 2 ts Baking powder
  • 1 1/2 c Whole wheat flour
  • 1 c All-purpose flour
  • 1 Egg white
  • 1/3 c Brown sugar, packed
  • 1 3/4 c Sour skim milk or buttermilk
  • 1/2 c Quick-cooking rolled oats
  • 1/2 ts Baking soda
  • 1 1/2 qt Casserole; 12 slices

Directions
  • Step #1 From Cooking a la Heart by Linda Hachfeld & Betsy Eykyn.
  • Step #2 wheat germ honey To make sour milk, place 2 Tbsp lemon juice or vinegar in a 2 c measure.
  • Step #3 Add skim milk to measure 1 3/4 c.
  • Step #4 In a large bowl mix flour, sugar, oats, orange peel, baking powder and baking soda until well mixed.
  • Step #5 Add milk & egg white.
  • Step #6 Stir just until ingredients are moistened.
  • Step #7 stir in the the sunflower seeds.
  • Step #8 Sprinkle top a non-stick sprayed 1 1/2 quart casserole lightly with wheat germ.
  • Step #9 Pour batter into casserole.
  • Step #10 Bake.
  • Step #11 If necessary, cover loaf with foil during the last 15 mins of baking to prevent over-browning.
  • Step #12 Cool in casserole for 15 mins; turn out onto wire rack.
  • Step #13 Brush top of loaf with honey & Sprinkle top with extra sunflower seeds if desired.
  • Step #14 Serve warm or cool.
  • Step #15 OVEN: 350 degrees TIME: 50 to 60 mins Nutrient analysis: 1 slice, Calcium: 63 mg, Sodium: 128 mg, Calories: 120, Dietary Fiber: 2 g, Fat: 1 g, Cholesterol: 1 mg, Diabetic Exchange: 1 1/2 starch.
