Catfish Curry With Tomato & Cilantro Recipe

Ingredients
  • 1 c Celery, sliced
  • 1 ts Worcestershire sauce
  • 2 ea Tabasco, dashes
  • 2 ea Bay leaves
  • 1/2 ts Thyme
  • 1 1/2 ts Salt
  • 1 lb Catfish fillets
  • 2 ea Garlic clove, crushed
  • 1/4 c Parsley, sliced
  • 1 lb Tomatoes, cut small, can
  • 1/2 c Bell pepper, sliced
  • 1 tb Brown sugar, lemon juice
  • 1 x Rice, hot, cooked
  • 1 tb Lemon juice
  • 1/2 c Shallots, sliced
  • 1/4 c Flour
  • 8 oz Tomato sauce
  • 1/2 c Water
  • 1/4 ts Pepper
  • 1/3 c Oil

Directions
  • Step #1 Cut fillets into 1-in pieces.
  • Step #2 Heat oil in large pan.
  • Step #3 Add flour, stirring until brown.
  • Step #4 remove this from heat & add water slowly, stirring til mixed.
  • Step #5 Add all ingredients except catfish & rice.
  • Step #6 Cover and simmer for 20 mins or until vegetables are tender.
  • Step #7 Remove bay leaves, add catfish & let simmer 8 - 10 min.
  • Step #8 more until fish flakes to the fork.
  • Step #9 Serve over rice in soup bowls.
  • Step #10 Possibly better to wilt all fresh vegetables before adding to pan.
