Cathe's Beef & Snow Peas Recipe

Ingredients
  • 2 c Brown sugar
  • 1/4 c Yellow mustard
  • Campbell's pork/beans
  • 1/2 lb Bacon
  • 1/4 c Maple syrup
  • 3 md Onions, sliced

Directions
  • Step #1 Fry all but 3 strips of bacon until crispy.
  • Step #2 (Can do this in two batches in an 8-c pyrex c in the microwave.
  • Step #3 Try high setting for 4 mins, stir bacon, & cook another 2 to 4 mins or until done.
  • Step #4 ) Remove to paper-towel covered plate & reserve.
  • Step #5 Crumble when cooled.
  • Step #6 Pour out all but 1/2" of bacon grease in the bottom of the c.
  • Step #7 Stir in the sliced onion & saute until clear (but not brown), stirring every now & then.
  • Step #8 (Probably do this on high in batches of 2 mins.
  • Step #9 ) When onion is done, stir in the the brown sugar & cook on high another min or two, until the mixture is bubbly hot.
  • Step #10 Add mustard & maple syrup & stir this to mix well.
  • Step #11 mix beans, crumbled bacon, & sauce mixture in a large (9x14x2 inch) baking dish.
  • Step #12 top this with strips of raw bacon.
  • Step #13 Bake uncovered at 350 degrees F.
  • Step #14 for an hr or so, or until the bacon is done & the dish is bubbly & the liquid has cooked down some.
  • Step #15 Do not cook this until dry.
  • Step #16 Serve hot or cold.
