Cauliflower Cheese Souffle Recipe

Ingredients
  • 1 tb Butter or margarine
  • 3/4 c Cheese gruyere or other hard
  • 4 ea Potatoes, large, peeled and
  • 1 ea Cauliflower medium, broken i
  • 1 ts To taste;also cayenne pepper
  • 1 tb To taste
  • 3 ea Eggs

Directions
  • Step #1 Cook the califlower in boiling salted water for 15 mins or until tender.
  • Step #2 Meanwhile, cok the potatoes in boiling water for 15 mins or longer until tender.
  • Step #3 Drain the potatoes & caulflower & place in mixing bowl.
  • Step #4 Add the butter, salt & pepper.
  • Step #5 Mash together to make a puree;it is better to use a potato masher as a food processor/blender can make it too mushy.
  • Step #6 Beat the eggs into the puree, one at a time, then stir in the the cheese reserving 2 tbsps of the cheese.
  • Step #7 Spoon into a greased dish, & bake one hr with foil on it in a moderate oven.
  • Step #8 Before serving, Sprinkle top the cheese on top & put under the broiler before serving.
  • Step #9 This can be prepared in the morning & put in the frig under one hr before serving.
  • Step #10 Total cooking time may be slightly under 1 hr if your oven is at 375 degrees.
