Step #1 Preheat charcoal grill to medium heat with most of coals on end opposite where turkey will be sitting directly over.
Step #2 Wash & rinse turkey, removing giblets.
Step #3 Dry with absorbent towels, & Spice up inside of turkey with salt & pepper.
Step #4 Rub outside of bird with oil.
Step #5 Stuff with onions, apple, orange, celery, 2 limes & the 1 lemon quartered.
Step #6 Completely fill cavities to keep turkey moist.
Step #7 Melt butter in roasting pan, add water & sliced lemon (add more lemon juice if desired).
Step #8 Cover turkey tightly (crimp edges) with aluminum foil, & cook over grill for 4 to 6 hrs, removing foil & adding smoker chips for last hr or so.
Step #9 Alternatively, stuff the bird and then cover with aluminum foil & bake in 350 degree oven for 6-7 hrs.
